Baking up some holiday deliciousness!

My youngest cousins came over on Monday to help me make, cut out, and decorate Christmas cookies! It was so much fun, and I think they had a really good time too : )

The following recipe is the one we used for the cookies. We doubled it to make enough for our two families.

Sugar cookies:
3/4 cup butter (1 1/2 sticks), softened
1 cup sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder

Cream butter and sugar, mix in eggs and vanilla. Combine flour and baking powder and add to wet ingredient, mixing until it is all incorporated. Chill for at least 1 hour.

Roll dough 1/8 - 1/4" thick. Cut out shapes with cookie cutters. Decorate with sprinkles, etc. if desired. Bake at 400 degrees for 5-7 minutes.

We decorated the cookies with sprinkles, colored sugar, coconut, crushed peppermints, toffee bits, M&Ms, and white chocolate chips, basically anything I had in the pantry. I definitely recommend decorating with crushed peppermints, it gives the cookies a subtle mint flavoring that is perfectly Christmassy!
